The essence of this chef’s cuisine, who is staunchly committed to his culture, is to highlight the value of the Ecuadorian pantry via its produce.

Quitu, the project of Juan Sebastián Pérez, is based on and revolves around a basic principle: defending the identity of Ecuadorian cuisine and the Ecuadorian pantry by applying modern approaches and ways of cooking. To this end, Pérez believes it is vital to focus on produce and those who grow and produce it. 

His talk will centre on working with small-scale growers and producers, who are not only the source of the produce that is essential for his cuisine, but is also a source of ethical inspiration as they grow and select the ingredients and provide top-quality food.
