In a territory where water is particularly present, Losada has built a gastronomic discourse using locally-sourced produce.

Juanjo Losada uses his surroundings to create a local cuisine – in this case, a territory with an abundance of water in the form of rivers and reservoirs. This distinctive feature has allowed this cook to look closely at what is found in the rivers of León. 

He will highlight not only fish and other river creatures, such as crabs, in his talk, but also show how the grasses and plants that grow close near to and in these waters can be the protagonists of a dish.
