Obscura evokes intimacy and mystery. Duality, too. The logo – two new moons forming a ring – gives the impression of looking through a veil, but also represents the independent yet complementary styles of the restaurant’s chefs, DeAille Tam and Simon Wong.
In-depth research – conducted on a journey criss-crossing the country – into China’s vast culinary culture allowed Tam and Wong to pour everything they learned into their gastronomic concept, a vision they call Innovative Modern Chinese Cuisine. In her talk at Madrid Fusión, DeAille Tam will show us the many faces of this concept that fuses ancient Chinese traditions of food, tea and incense with Western perspectives.
